Meet Your Chef de Cuisine-José De Brito
His parents immigrated to France, his father from Portugal and his mother from Spain. José moved to New York City as a young man and worked for Urbani, an Italian company specializing in truffles.
After finding his passion for food, he then moved to Charlottesville, Virginia and opened his own French market and bistro, Ciboulette, which he sold after eight years of business. In 2015, he became the opening chef of The Alley Light.
During José’s first year at The Alley Light, the restaurant was among twenty-five James Beard Award semi-finalists for Best New Restaurant in the United States. The following year, José was a James Beard Award semi-finalist for the Best Chef of the Mid-Atlantic region. The restaurant also received kind reviews from The Washington Post & Washingtonian Magazine.
These accolades motivated him to apply at the renowned Inn at Little Washington, where he worked when it was awarded its first two Michelin stars. His time there was a lesson in humility, and he observed how an establishment of that caliber operates with such precision. He then accepted a Chef de Cuisine position at Fleurie, a modern French restaurant in Charlottesville.
The decision to return to Little Washington was motivated by his love for the historic town where resides in a charming farmhouse with his wife, Christine. Foster Harris House is excited to welcome José to bring you the most delightful dishes for the most exquisite dining experience.
